O Olive Oil
Shaved Asparagus Salad with
Clementine/White Balsamic Dressing
And Crunchy Clementine Croutons
2 servings
O Olive Oil Clementine Croutons
4 or 5 slices of or fresh Italian bread cut into chunks
3 Tablespoons of O Olive Oil Clementine oil
1 Tab butter
Melt butter and oil together in a cast iron skillet (or non-stick if you prefer) till hot... Saute bread in the butter/oil mixture till its toasted and crispy.
(These are SO good try and save some for the salad.)
1 Pound of fresh asparagus- Shaved with a veggie peeler
1/2 cut of toasted pistachios- rough chopped
1 Tab. fresh chopped parsley
1 tea Fresh oregano
4 Tablespoons O Olive Oil Clementine Virgin Olive oil
2 teaspoons O Olive Oil White Balsamic Vinegar
1/2 Agave nectar
Grated Parmesan cheese
Pinch of course Sea Salt
Blend the Parsley, oregano, O Olive Clementine Oil and O Olive Oil White Balsamic Vinegar and agave with an emersion blender or whisk till well blended.
In a bowl pour the dressing over the shaved asparagus, add the pistachos and gently toss with your hands. Arrange on a plate. Add the grated parmesan cheese and Clementine croutons.
Sprinkle with the sea salt and serve at once.
The delicious flavors of the O Olive Oil crushed with Clementine and sweet fruity O Olive Oil White Balsamic vinegar is amazing on this fresh asparagus salad! When you add the crunch of the Clementine croutons you get a wonderful salad no matter what the season!Check out O Olive Oil here...

ReplyDeleteGive it a try sometime Kelly...The shaved asparagus was sweet and tender and so delicious and Healthy. Using the O Olive Oil Clementine crush olive oil gave the asparagus a vey unique taste! I also make the croutons with the O Olive Oil Clementine oil and I couldn't believe how delicious they were... I'm going to make some right now for my lunch salad!
